Apple Spice Cake

I threw this cake together this evening because I had sour milk that I needed to use up. I hate throwing food away. It's based on a few simple recipes that I've made before.

Sift the flour, salt, baking soda, and spices together. Grease and flour or sugar a 11 x 7" baking dish. I used plain white sugar to coat the pan, but then I added a layer of brown sugar on top of that to add flavor.

Peel, core, and chop the apples into smallish chunks. I'd recommend using two different types of apples for depth of flavor, the same way you would in a pie. I prefer granny smith and honeycrisp apples and I used one of each here.

Cream the butter and sugar. Add the eggs and beat well. Add the vanilla (I think you could also substitute brandy for vanilla here). Stir in the dry ingredients, adding alternately with the milk. Stir in the apples.

Bake for 75 minutes at 350. It might not take the full 75 minutes, but this does take a long time to finish baking.
